Scallops: Picking and Preparing them like a Pro

If you are interested in scallop recipes, one of the first things you will need to know is how to pick the right scallops for your scallop recipes. The smell of the scallops is a good indicator of the freshness of the scallops. If the scallops smell strongly, do not purchase them. They should have a slight sea smell, but they should not smell fishy. The stronger they smell, the more likely they are not fresh. Your scallops should not be mushy. When you touch it, it should bounce back rather than caving in. If they are mushy, they are old, and you do not want to buy them. Scallops are going to be white to a light pink or peach color. If they are another color, they have probably been sitting around for a while, and you do not want to buy them. Before picking out your scallops, it is a good idea to make sure that you have looked at your scallop recipes to see what  size of scallop is going to be used in your recipes.
Although often the scallops will already be cleaned and prepared for you to use, if you catch them yourself or you get scallops that are still in the shell, you will need to understand how to properly clean them. Putting your scallops on ice is a good start. The ice will cause them to open up, making it easier to get the scallops out of their shells. If you do not have ice, you can still open the shells by sliding a sharp knife or spoon through the opening between the two shells and cutting the muscle, forcing the shell open. This process is going to be more difficult, though.  If you have put your scallops on ice, once they open, grab a scallop. With the hinge facing away from you, scrape the scallop away from the top shell using either a knife or a sharpened spoon. The top shell can now be discarded. Scrape the dark muscles away from the white edible meat. Discard all the other muscles. The white meat can either be removed from the bottom shell, or it can stay on the shell until you are ready to cook the meat. Some people will even cook the scallop while it is still in the shell.
There are a variety of ways that you can cook scallops using scallop recipes. Some scallop recipes will have you bake the scallops. This will generally take between 15-20 minutes depending upon the temperature and the recipe. Another way that you might cook your scallops is by searing them. Each scallop will take around six minutes to cook using this process, but you may have to cook more than one batch to get all of your scallops cooked. Some scallop recipes will also call for the scallops to be fried, saut?ed, or broiled.
