With all the hustle and bustle that goes on in our lives each and everyday it easy to understand why so many people overlook the simple little things that can improve their day and enhance relationships they have with those that they care about. I am referring to preparing meals for yourself and your family. While meals through the week may consist of whatever is easiest to throw together, the weekend at least offers us a time where we can dazzle our family with our culinary talents.
The foundation of preparing a gourmet meal is the cookware that we use. Before you start to say that the cookware doesn’t affect the quality of the food you are preparing I would like you to stop and think for a moment. Would you rather eat food that is burnt or undercooked because the heat was not distributed evenly or food that was cooked properly and evenly so that the taste of the herbs and spices came through the food?
Keep in mind, that cookware that has hot spots will cook your entire meal at a different rate. The type of cookware you prefer, whether it is stainless steel, copper, aluminum or cast iron is not as important as the quality of the cookware you are using. Quality cookware will help make sure that the heat is distributed evenly for proper cooking, and the lids to the cookware will fit appropriately to help avoid splashes and help seal in the heat.
The main concern among most people though when it comes to purchasing quality cookware has more to do with their budget then it does with the way your food will taste when you cook with it. While quality cookware does not have to cost a fortune, it also doesn’t have to be a matching set. Each type of cookware has a specific enough purpose that buying individual pieces can help complete the essential quality cookware needs.
For example, copper pots and pans are the most expensive and they distribute heat the best. However they are not ideal for preparing all types of foods, they scratch and depending on what you are cooking in them, they may transfer a metallic taste you to your feast. If there is one piece of copper cookware you must have it is a copper mixing bowl. The copper mixing bowl is essential in beating egg whites; the copper lets you beat the white to their maximum volume.
Aluminum is less expensive, does not distribute heat as well as the copper and can also transfer a metallic taste to you food. If you are going to purchase aluminum then make sure that you are getting anodized pans. This will help make them last longer and decrease the reactivity with your food. Cast iron skillets are wonderful for specialized cooking and searing the best steak you will ever have. They are slightly more expensive then aluminum and they need to be kept seasoned to prevent sticking.
Stainless steel pots and pans are what I like to call the middle ground. They are in the mid price range and distribute heat better then aluminum but not as well as copper and it doesn’t give you food a metallic taste. It is easy to clean and is good for everyday cooking.

Las Vegas summers create a challenge for cooking at home. Not only does heat suppress an appetite, but the high temperatures make it difficult to withstand the heat in the kitchen. Follow these five tips for better cooking (and better eating) in hot climates.

#1 — Eat Food to Cool You Off

The benefits of water cannot be understated. Water rehydrates your body, thins your blood, aids digestion, and cools you off. Drinking your eight glasses of water and eating foods with high water content are your best bet in the summer. Look to foods such as melons, lettuce, and cold, non-dairy based soups.

Keep in mind that very cold foods and beverages may be refreshing at first, but foods such as ice cold beer and ice cream do not cool your body in the long-term. Your body will work less (and therefore produce less heat), if you consume food and drink that is room temperature.

Other foods that will decrease your body temperature include:

  • Spicy foods (i.e., chillies, peppers) promote sweating and therefore body cooling.
  • Sports drinks contain electrolytes that will help replenish sodium, potassium, and magnesium, which are lost during perspiration. Just don’t overdo it, since some of these drinks are loaded with sugar.
  • The receptors in your body respond to mint with a cool, tingly reaction. While your core body heat might not decrease, a bit of mint in your drink or dessert will have a nice cooling affect.

#2 — Meal Ideas that Don’t Require an Oven

Thaw pre-cooked shrimp with running water for a salad you won’t forget. Make a large batch of cucumber soup and dish up a cool cup for lunch. Port wine cheese tastes better at room temperature and makes an easy meal when you add deli meats, crackers, and sliced raw vegetables to a platter.

#3 — Meats that Require the Least Cooking Time

There is not an absolute when it comes to the fastest cooking meat. Cooking time depends on the size and thickness of the piece of meat, how thorough you cook the meat, and how you choose to cook the meat.

However, baking any kind of meat will almost always take the longest. This is especially true for a roast where you place the meat in an oven bag and bake for upwards of three and half hours. Likewise, baking chicken could take anywhere from 35 minutes to three hours.

The faster cooking methods include pan frying, deep frying, broiling, and grilling. Pan fry cube steak in eight minutes. Deep fry a fillet of fish in three to five minutes. Broil a one-inch steak in five minutes. Grill a chicken breast in eight minutes.

#4 – Take it Outside

As mentioned, pan frying and broiling are two methods that take the least amount of time in terms of cooking meat and fish. But turning on a hot oven or stove top is counter-intuitive to cooling your home, so take it outside and fire up the grill instead. Most all meats and fish can be grilled in about 10 minutes, but again, this depends on thickness. For example, an entire fish may take 20 minutes to grill.

#5 – Tomatoes and Blueberries

Fruits and vegetables that contain antioxidants will help to prevent cell damage from free radicals in the environment. These harmful elements that come from the sun, wind, and pollution all impact our bodies, including our skin. Spinach and berries are great sources of antioxidants.

Additionally, pink or red fruits and vegetables (think grapefruit and tomatoes) contain something called lycopene, which is known to have natural sun block qualities. This summer, eat your way to healthier skin and a cooler body.

Meal times so easily become a battle field when we are cooking for little ones. We spend hours preparing a nutritious meal but it all ends in tears with a toddler tantrum at the tea table.
Are there any simple guidelines we can follow when cooking for little ones? I would say after many years of experience and many tantrums, mine as well as the kids, that it is possible to take some of the tension out of cooking for little ones.
My first rule when cooking for little ones is don’t cook. Or at least cook less. Children love raw foods and they are very healthy. Keep some cut up carrot sticks in the fridge. Washed, peeled and sliced into finger sized pieces they make an excellent snack. With a little houmous, or peanut butter maybe, they are extremely nutritious. Raw food really is good for children.
On the same principle why not try homemade smoothies. They can be prepared in advance and kept in the fridge. This is one of the simplest ways of getting children to eat fresh fruit and vegetables. You can also turn smoothies into a kind of ice pop by freezing them. They are lower in sugar than commercially available products.
A thing we easily forget when cooking for little ones is that they have small stomachs. They need to eat little and often. The large meals we habitually prepare for adults are just too much for children. They simply cannot wait four hours from one meal to another. You need to have lots of healthy food in small portions ready to hand.
When it comes to the main family meals the single biggest problem is vegetables. So many small children will not eat vegetables, especially green vegetables. The answer is to get creative. Sauces exist for a reason. Broccoli was surely made for garlic butter or cheese sauce.
Some people will object that children will not eat garlic. But if they are introduced to it slowly they will. It will soon become a favourite and it is very healthy. The same is true of cheeses. It is worth introducing children to variety of cheeses. They might not like them all but they will develop a taste for some. Cheese is a valuable source of calcium and vitamin D which are important to growth of strong bones and teeth.
It is important to introduce children to what we think of as «adult» tastes because that is the way to ensure that their diet is varied. You will also avoid the trap that so many parents fall into of having to cook two meals. One word of warning here: when cooking for little ones never add salt. Salt is very bad for babies and small children.
Many of the problems associated with cooking for little ones can be overcome by cooking with little ones rather than just cooking for little ones. That is to say let them help you in the kitchen. I know that will make twice as much work and twice as much mess, but it will be worth it in the long run. Cooking for little ones should be about introducing them to the world of food and encouraging a healthy relationship with food. It is better for a child to learn that a muffin is something you bake with care and love rather than something you grab in a hurry and eat without thinking. You can guarantee that the peas they have shelled themselves will be eaten and not left on the plate.
Even after we have done all these things there will still be time when the kids simply will not eat the meal you have lovingly prepared. This brings me to what is perhaps the golden rule when cooking for little ones. At this point you must resist the temptation to scream at them and throw dishes across the kitchen. Their refusal to eat is not a reflection on you or your cooking. They are only human and so are you. The best solution is to learn to make soup or keep some chickens in the backyard. They will always eat what you cook. Well, nearly always.
