Cooking a Baked Potato is Not as Boring as it Sounds

Baked potatoes have been a popular side dish for many years. Besides being baked, the versatile potato can be boiled, slow cooked in a crock pot or fried. But, baking remains one of the most popular ways of cooking a potato.
Potatoes are baked in either a conventional oven or a microwave. They can also be baked in foil in a barbecue grill.
Choose the potatoes you use for baking wisely. They should be firm and have no wrinkles or stems growing from the eyes. Select potatoes of medium size; all potatoes should be (close) to the same size and shape. This will make sure the potatoes are all finished cooking at the same time.
To bake in a conventional oven:
1. Preheat your oven to 450°F.
2. Scrub all dirt from potatoes and dry thoroughly.
3. Poke holes in each potato to allow steam to escape.
4. Rub oil on potatoes before baking. This will keep moisture inside the potato and make the skin a bit crispy. Some people may want to eliminate this step.
5. Put potatoes on baking sheet and bake for 50 to 60 minutes, or until tender when pierced with a fork.
To bake in a microwave oven:
1. Wash potatoes and dry thoroughly.
2. Poke holes in potatoes to allow steam to prevent them from exploding in the microwave.
3. Cook for 10 to 15 minutes, depending on how many potatoes are put into the oven.
4. Potatoes should be allowed to stand for 5 to 10 minutes to finish cooking.
To serve a baked potato:
1. Slice each potato in half.
2. Squeeze each half from both ends to loosen the potato from the skin.
3. Top your completed masterpiece with your favorite topping: Butter, broccoli and cheese, bacon or sour cream are all delicious toppings.
Here’s a recipe for a fancier main dish that is suitable for company.
Tuna Stuffed Potatoes
(Serves 4)
Ingredients:
4 hot baked potatoes
1/2 cup hot milk
2 green onions, minced
1 egg
2 Tablespoons butter or margarine
1 teaspoon salt
Dash of cayenne pepper
1 medium tomato, diced
1 can (7 1/2 oz.) tuna, drained
2 Tablespoons grated Parmesan cheese
Parsley for garnish
Instructions:
1. Cut a thin slice from one flat side of each potato. Scoop out the interior into a bowl. Mash, adding the hot milk; whip until fluffy.
2. Add the green onions, egg and butter, whipping mixture well. Season with salt and cayenne. Fold in tomato and tuna.
3. Pile this mixture back into the skins, mounding it high (shells will be heaped up almost 3 inches higher).
4. Sprinkle with Parmesan cheese
5. Place on baking sheet. Bake at 400°F for 10 minutes or until heated through.
Here are a few more tips that will help:
* Use a muffin tin to hold potatoes upright for even baking.
* You can cut baking time in half by skewering with a «potato nail.»
* Cook extra for hash browns for tomorrow’s breakfast.
As you can see, baked potatoes don’t have to be plain and boring. Use interesting ingredients for «twice» baked spuds or use unexpected toppings to keep this side dish from getting boring.

However, if you can skillfully apply basic cooking methods to the seasonal ingredients, then you really have the most nutritious and best tasting meals you can be proud of and your cooking will be more healthy.
I want to spend this summer examining where our food comes from, who is growing our food, and how they’re growing it. You might begin to care about where your food comes from for any of the many reasons that exist: The cost of bad food, Better quality foods, Ecology and local farming, the flavor of ingredients, the better nutrition, or world-wide labor practices, the use of pesticides, organically grown food, non-irradiated, low carbon footprint…WHATEVER the reason, you should start asking where your food comes from and how it impacts not only your health and nutrition, but the entire world’s.
The first step in my investigation is a conversation with Sandi Kronick from Eastern Carolina Organics to ask some basic questions about how I can get started in finding the freshest, most wholesome ingredients in my area.
Eastern Carolina Organics is an organization dedicated to making local, family farmed and organic foods more available to the general population. They support local farmers with education and distribution channels for their products.
Remember, healthy cooking and healthy ideas start with healthy ingredients and you don’t have to be cooking gourmet dishes to care or tell the difference. love to cook, but it is also important to me that the meals I serve my family are both nutritious and healthy. I have always been comfortable using stainless steel saucepans but when it came to frying something on the stove, I would often resort to nonstick. Now that I’ve started using stainless steel cookware more extensively, I wonder why I didn’t make the transition earlier.

In the late 1990s and early 2000’s there were a lot of news reports showing that chemicals known as PFO’s, PFOA’s (perflurooctanoic acid)and PFC’s were being released from the Teflon cookware into our bodies. There is evidence that this chemical has been linked to cancer in lab animals and may, in fact, have led to birth defects in DuPont employees. While DuPont, the main manufacturer and user of these chemicals, claims that these chemicals are safe, DuPont has paid out millions of dollars in compensation not only to their employees but also to the people living in the vicinity of the Parkensburg factory. Whether Teflon is completely safe to use in your home is still debatable, for even DuPont’s own experts advise caution when using nonstick items, particularly at high temperatures. Studies indicate that a pan heated to 680 degree F. (which could take only minutes if a pan is left unattended to preheat) does release PFOA. Based on the growing health concerns about nonstick cookware, though it is initially cheaper to purchase, it may not be the best decision in the long run.

After researching both Teflon and stainless steel cookware, I was pleasantly surprised to learn that some of the criticisms of stainless steel cookware are unfounded. True, the initial cost of stainless cookware can be expensive, ranging in price from $300 to $2,500 for good quality stainless cookware. However, one should really consider it an investment that will last a lifetime with proper care. Stainless steel is noted for its durability and ability to resist food acids and alkaline foods as well. Steel is mixed with chromium and nickel to produce a corrosion-resistant steel that is scratch resistant and easy to clean.

The better-quality stainless steel waterless cookware is 5-ply (304 surgical stainless steel, aluminum alloy (a bonding agent for heat transfer), pure aluminum for fast and even heat distribution, aluminum alloy acting as a bonding agent for heat transfer, and surgical stainless steel) or 7-ply (304 surgical stainless steel, carbon, 304 surgical stainless steel, aluminum alloy, pure aluminum, aluminum alloy, and AISI 430 stainless steel). These layers allow for even heat flow and durability. The aluminum conducts the heat well in the inner layers. However, it would not be good on the outer layer because it would corrode and enter our food. Stainless steel effectively protects the food and cookware.

Many choose Teflon pans over stainless steel because they believe that nonstick pans are easier to clean up. However, cooking with stainless steel does not mean that foods have to stick in the pan. By using quality cookware and following simple directions, you can produce a great meal every time. Stainless steel cookware with the heavy multi-ply bottom provides an even heat that, if properly regulated, will not cause your food to stick. After preheating your pan on medium, simply put your pieces of meat or poultry in the pan, let them sear for 5 — 7 minutes on one side, then use tongs or a spatula to turn over and sear on the other side for the same time. If you try to turn your meat too early, it will stick. However, if you follow the above directions, the sticking is minimal and cleanup is easy. With stainless steel, most foods are cooked on low or medium heat. High heat is not recommended. You’ll need to get to know your stove. Gas stoves allow for more heat control, but since there is so much variance among stoves, it is recommended to start out at the lower heat.

The waterless (steam-controlled) stainless steel cookware offers a whole new dimension to your cooking experience. Not only will your foods retain more flavors, but your foods will be healthier because they will retain 98% of their vitamins and minerals compared to the 58% retention rate of conventional cookware. Because foods are cooked in minimal water (the natural water contained in most foods provides enough moisture), there is minimal shrinkage. You’ll definitely notice how the color, shape and taste of your food makes dining a truly pleasurable experience!

Purchasing cookware can be a major investment! Therefore, before making that decision, spend some time researching your options. Weight the pros and cons of each and then make an informed decision. You may decide that you are more comfortable using Teflon and that’s fine. However, if you have had your pots and pans for a while, check their surfaces. If they have scratches or are beginning to peel off, get rid of them! Having been raised in rural Alabama, I must confess, I’m a bit domesticated. Growing up on my Grandmother’s farm, I spent many a summer shelling peas and canning them in her kitchen. As I got older, we moved away from near my Grandmother, and my canning days were ended.
About 20 years ago, I got the wild idea to try home canning again, after finding a pressure canner in a catalog. I bought two and I have been canning ever since. Every year at Christmas my husband and I can about 75 quarts of pasta sauce and give them out as gifts. All of my friends and family look forward to it. I love to can and have been collecting canning recipes for years.
Home canning is a great way to save Summer’s bounty, and shopping for fruits and vegetables at local farmer’s markets can save you money. Using local farmer’s markets also help the environment because the food is locally grown, and therefore no shipping is involved.

What Kind Of Equipment Do I Need

Use only standard Mason, Kerr or Ball type home canning jars and two piece self-sealing lids. Mayonnaise jars are not recommended for canning. The jars that you get from the Classico spaghetti sauce are good because they are Mason jars. Canning jars are available in a variety of sizes including 1/2 pints, pints, and quarts. Pint and quart jars are most commonly used, but some foods like crab meat and mushrooms should only be canned in 1/2 pint jars. Wide mouth jars are more easily filled and emptied, but they cost more than standard jars.
You will also need a good timer, an open mouth funnel, to fill jars with, a jar lifter, and tongs. And of course pot holders and baking racks or towels to set the hot jars on after canning. Other items that you will need are, a ladle with a lip, a sieve, a colander, a food mill, and sharp knives. Some of these items you will only need if making jams and jellies.
Home canning can be one of the most enjoyable experiences that you will ever have. Get the whole family involved. It will make many great, lasting memories that your family will always have.
